Mother's Day Supper

Unfortunately, we couldn't go down to visit mom today.  So, Caleb and I did the best we could to celebrate the day.  I'll post some pictures later of the yard work we did.  I decided to take this opportunity to make a recipe I saw on the Pioneer Woman blog for Chicken with Tomatoes and Garlic

I did not have a dutch oven, so I improvised.  I also didn't have any fresh herbs, wine or tomato paste.  So, instead I used just the canned tomatoes, 1/2 cup of homemade chicken broth and bay leaves/italian seasoning. 
 

This dish was amazing!  I couldn't believe how good it smelled and how flavorful the chicken was.  The chicken was also incredibly tender.  I've never really liked drumsticks, so I think I'll try this next time chicken breasts.  This recipe is a definite keeper.  Caleb even liked it :)!
