My favorite dip...Ever!

Ok, I have to admit that I actually have 2 favorite dips, with a 3rd one coming up close behind. But, for now, we are going to pretend that this my all time favorite dip. It really adds to the intrigue of my post :).

When I was in college, I traveled down to Texas with a couple of friends to visit one of their girlfriends who was stationed there. I was fortunate to get to visit, and even stay with, my cousin, David, for a couple of days. We had a blast! Maybe too much fun now that I think about it...But, I'll blame all of that on David. After all, he had to pay back the Blaschke family for all of the corruption he was exposed to during his youth.

One day, he made us all this incredible dip. We were in heaven. In fact, we were all so excited by this dip, that we made him take us to the grocery store to stock up on the one ingredient we didn't think we had back in SD. Well, now that I'm older, I see that we were just misguided in our youth. You see, the ingredient we picked up in Texas was just Rotel. That stuff is easy to find anywhere you go. But, we were limited in our grocery store knowledge at that time.

So, even though this dip recipe is extremely common now, I'm still calling it Cuz Dave's Rockin' Texas Dip.
1 roll of Jimmy Dean's sausage, browned & drained
1 can of Rotel - do not drain (I noticed recently that they have a super hot variety, but was too chicken to try)
1/2 block (the larger box) of Velveeta

Mix everything together, melt and serve with tortilla chips. Voila! The best dip ever! This dip is a Super Bowl Sunday staple in our house. Had it this Sunday and relished every minute.
